does anyone have good recommendations for a 1 or 2-day, self defense/gun training class for women ??
would like it to include hand guns, rifles and shotguns, if possible.

Kind of a ways away but check out One Life Defense. They do one on one private training.

Also, Apex Shooting and Tactics, Chris Cerino Training Group, and Commence Firearms Training Academy all offer women-only novice-beginner level handgun classes:

I am currently unaware of any that will fill the specialty role of women's only carbine/shotgun classes.
