This is easy.

Use a physical object in your environment. Place the nose of the slide against the edge of a table top, for example, and push down, using your body weight.

This is the technique used by one handed people, arthritics, injured cops, and just plain folks with weak hands. It works well and I teach it all the time. Variations include using your boot or shoe, a door jam, etc...

It's also handy if you have to rack a pistol while carry precious cargo you don't want to drop, like a baby...

You can often rack a gun with an exposed hammer more easily by cocking it first, relieving the extra tension of the hammer spring, in the case of a 1911, for example.
